When I stop scanning with bluetoothctl, my device disappears from the list of devices.

This is expected behavior. When you stop scanning with bluetoothctl, the list of devices only shows devices that are currently connected or paired with your system. The devices that were discovered during scanning but not yet paired or connected will no longer be visible in the list.
